Chocolate chia pudding with a pecan and blueberry topping

One of my favourite deserts, this chocolate chia pudding is both indulgent and delicious. Packed full of antioxidants, fibre, protein and omega 3. What’s not to love!

 

Ingredients:

200ml of coconut milk or alternative

2 tsp pf honey

1 tsp of cacao for milk chocolate flavour/ 2 tsp if you prefer dark

2 tbsp of chia seed

Handful of Blueberries

4-5 Pecans

 

Instructions: 

In a bowl gently mix together the coconut milk, honey and cacao

Then gently stir in chia seeds and leave in the fridge overnight

Top with blueberries and pecans before serving
