These gooey blueberry baked slices are one of my favourite snacks or quick breakfast options at the moment They are full of healthy fats, fibre and protein, so I know they’ll keep my blood sugar levels balanced and hunger at bay.
Ingredients:
200g of oats
1 tbsp of cinnamon
2 tbsp of flaxseed (optional)
2 tbsp of chia seed (optional)
1 tsp of baking powder
4 tbsp of coconut oil
2 tbsps of honey
1 tbsp of vanilla extract
1 large egg
Instructions:
300ml of coconut milk/alternative milk
150g of blueberries
Pre heat the oven to 200 degrees
Mix all the dry ingredients in a large bowl
Melt coconut oil and add to the mixture with the egg, honey, vanilla extract and milk
Mix well
Gently stir in blueberries
Pour mixture into small baking tray
Bake for 35 minutes
